The Best Gluten-Free Waffles!

National Waffle Day was yesterday, so I thought I would share with you my favorite gluten-free waffles! I absolutely love Van's Waffles-- they are amazing!! I have recently gone gluten-free and dairy free, so finding a lot of good tasting food has been a bit difficult. I discovered Van's Gluten-Free Blueberry Waffles* and I fell in love. I definitely recommend them to everyone. You can even not be gluten-free and I still recommend that you try them. 

I always use my toaster when I eat waffles. I also prefer jam over maple syrup. I like to save my maple syrup so I can douse my pancakes in it! I put Smucker's Simply Fruit Seedless Black Raspberry Spreadable Fruit on my blueberry waffles, which I absolutely love as well. This jam really complimented the blueberries to make the waffles absolute perfection. 

The other Gluten-Free waffles they make are Totally Original, Apple Cinnamon, and Ancient Grains

Rio Olympics Recap: Days 7 - 9 (Gymnastics, Tennis, Swimming, Soccer, + Track and Field)


Since my last Olympic recap, so many wonderful things have happened in the world of gymnastics. We need to talk! Specifically, today was an amazing day for the USA, Great Britain, and Brazil. 

Simone Biles won Gold in the Women's Vault Final. We all saw that coming. She is just too good! Maria Paseka of Russia won Silver and Giulia Steingruber of Switzerland won Bronze. Who would have thought someone from Switzerland would medal?! 

Madison Kocian of the USA won Silver in the Women's Uneven Bars Final. Aliya Mustafina of Russia won Gold. Personally, I don't see how Kocian's routine put her in second place. She should have won Gold. She stuck the landing. She was perfection. She was robbed. Sophie Scheder of Germany won Bronze. 

Max Whitlock of Great Britain won Gold in the Men's Floor Exercise Final. This gave Great Britain their first Gold medal in Gymnastics. Diego Hypolito of Brazil won Silver and Arthur Mariano of Brazil won Bronze. BRAZIL won TWO medals. This is astonishing! What a great day for Brazilian Gymnastics! Both Brazilians completely lost it. I'm glad that they both got on the podium. They deserved to win because they both produced great clean routines. 

Max Whitlock of Great Britain won Gold in the Men's Pommel Horse Final. Great Britain's second Gold medal in Gymnastics (and on the same day)! Louis Smith of Great Britain won Silver. Alexander Naddour of the USA won Bronze (yay!!). 


Murray won the Men's Singles Final today! He played Juan Martin del Potro of Argentina, who definitely gave him a run for his money. Del Potro played magnificently, however he just lost it in the end. Even so, del Potro still won the Silver medal. Nadal unfortunately lost to Kei Nishikori of Japan in the Bronze medal match of the Men's Singles. The good news is that Nadal and Lopez won Mergea and Tecau of Romania in the Men's Doubles Final. 



Dirado won Gold in the Women's 200m breaststroke, beating out Hosszu. 


Ledecky swam a World Record time and won Gold in the Women's 800m freestyle. 
Phelps placed second in the Men's 100m butterfly. 
Ervin won Gold in the Men's 50m freestyle. 


Manuel placed second in the Women's 50m freestyle. 
Jaeger placed second in the Men's 1500m freestyle. 
Team USA won Gold in the Women's 4x100m medley relay. This gave the USA its 1000th Gold medal at the Summer Olympics. 
Team USA swam an Olympic Record and won Gold in the Men's 4x100m medley relay. This was Phelps last race in the 2016 Olympics. He now has 28 medals in total- 23 of them Gold. 


Team USA lost to Sweden in the Women's Quarterfinals. This was an unfortunate and disappointing loss! 

Track and Field 

Michelle Carter of the USA won Gold in the Women's Shot Put. 

Almaz Ayana of Ethiopia ran a World Record and won Gold in the Women's 10,000m Final. This was the most spectacular race I have ever seen! Ayana broke away really early. At first it was hard to tell whether she broke off too early or whether she would hold on for an unbelievable win. She definitely held on and ran an amazing race. What a fabulous win!  

Jeff Henderson of the USA won Gold in the Men's Long Jump. 

Elaine Thompson of Jamaica won Gold in the Women's 100m Final. Tori Bowie of the USA won Silver. 

Nafissatou Thiam of Belgium won Gold in the Women's Heptathlon. 

Mohamed Farah of Great Britain won Gold in the Men's 10,000m Final. He recovered FROM A FALL and went on to win this race. He won Gold in the 2012 London Olympic Games in this race, as well as in the 5000m. He is truly unbelievable! Stay tuned because he is also trying to repeat Gold with a win in the 5000m. I am rooting for him! 

Jemima Jelagat Sumgong of Kenya won Gold in the Women's Marathon. She is the first Kenyan women to do so at the Olympics, which definitely surprised me. She came in at 2:24:04. 

Caterine Ibarguen of Colombia won Gold in the Women's Triple Jump. Yulimar Rojas of Venezuela won Silver (yay!!). 

Wayde van Niekerk of South Africa ran a World Record and won the Men's 400m Final. His performance was spectacular! He beat Michael Johnson's world record by .15 seconds!! 

Usain Bolt of Jamaica won Gold in the Men's 100m Final. He is definitely the fastest man in the world! He is just insanely talented! Justin Gatlin of the USA won Silver.

Rio Olympics Recap: Days 5 - 6 (Gymnastics, Tennis, + Swimming)


Let me just take a moment to say... I called it. Well, pretty much everyone called it. Simone Biles won Gold in the Women's All-Around Finals today!!!! Aly Raisman won Silver (yes!!) and Aliya Mustafina of Russia won Bronze. It was an intense competition and it definitely came down to the wire for who would win Silver and who would win Bronze midway through the competition. Of course, Aly nailed her beam and floor routine, securing her second place. I can't wait for the Individual Finals!!!

Nadal and Murray won their third round of singles today. Madison Keys of the USA and Steve Johnson of the USA won their third round of singles as well. Hopefully we will see these Americans in the Finals!!! #represent 


Prenot placed second in the Men's 200m Breaststroke. 
Adrian placed third in the Men's 100m Freestyle. 
Team USA won Gold in the Women's 4x200m Freestyle Relay. 

Murphy won Gold in the Men's 200m Backstroke. 
Manuel swam an Olympic Record time and tied for first in the Women's 100m Freestyle. 
Phelps. The man. The myth. The LEGEND. He won his 22nd GOLD medal today in the Men's 200m IM Final. This is his FOURTH straight win at the Olympics in the Men's 200m IM. In other words, he's dominted the past 16 years... #yes #winning
